Simple creamed corn quiche, summer rolls, amazing meatballs and quick, chicken curry and chicken empanadas

I like portable meals at this time of year. Last summer we'd pack up a pie and a few other fixings and head down to the beach for a picnic dinner. Sometimes we light a small fire and toast marshmallows but mainly the girls are just happy to have something to eat and a swim or boogie board.
There's something so lovely about the longer days before the madness of the holiday season and the huge crowds arrive at the beach.
This week's five recipes are mainly all dishes you can either transport or make ahead and simply reheat. It makes life so much easier when you don't have to think about what to cook for dinner and can just pop something on to reheat, or quickly cook, like the most amazing meatballs included in this collection. This is not my recipe but they seriously are the best meatballs ever. The recipe makes a double batch so make some on a Sunday for Monday night's dinner and freeze the other half to pull out when you have run out of dinner ideas.
If you're wanting to change things up a bit and try something new, I've also thrown in a Korean squid recipe. Not one for the faint hearted, or the children, but, if you like a bit of heat and spice, it's definitely worth a try.
