One pot dinners

This is such a simple fast recipe to turn out and my girls love it. It's a great portable meal and you can also make it ahead and reheat. Of course, it tastes pretty good cold too.
Serve it up with a salad and dinner is done!
2 sheets of ready rolled puff pastry
1 tablespoon of oil
1 red onion finely diced
4 rashers of bacon, finely sliced.
2 cups of milk
1 cup of grated cheese
Line a quiche tin with baking paper and lay pastry inside it. Preheat your oven to 180 degrees.
Heat a fry pan with oil over medium heat. Gently fry onion and bacon until onion is soft and bacon is a little crispy.
In a separate bowl mix eggs, milk, corn and cheese. Add bacon mixture. Pour mixture into the pastry case.
Bake for 40 to 45 mins until the quiche is set.
Serve with a salad.
