Weeknight meals - Pad Thai, Tom Yum, baked eggs and easy pizzas

Summer has definitely arrived around here. With the return of the sunshine we've also started summer sports and with swimming or surfing happening three nights a week we need quick and easy meals.
Pad Thai with chicken is quick meal my girls love. You don't need to buy ready made packet sauces. The Pad Thai sauce in this recipe from Thanya, which features in the cook book, is quick, easy and delicious. I often add a few more veges than the recipe suggests too.
There's a bit of a Thai food theme this week with Tom Yum as well. My girls find Tom Yum too spicy but I'll make it for an adult meal and the girls will have pizza made with dough that I keep in the freezer in portions. I make this dough ahead and also pull it out to put scrolls or pizzas into their lunch boxes too.
There's also a recipe for baked eggs and Japanese pizzas or Okonomiyaki. You can fill these with just about anything and they're great for using up leftovers in your vegetable bin.
