One pot dinners

While we're on the subject of pizzas and easy meals, these Japanese pizzas are great for using up what's left in our vege bin and they're a quick dinner.
What could be easier. Cabbage, carrot, spring onion as the base and top with what ever else you feel like. I added prawn meat to mine but you could just make them vegetarian.
¼ of a cabbage finely sliced
1 carrot grated
1 spring onion, finely sliced
1 free range egg
1 teaspoon soy sauce
1/2 a cup of flour
1/2 a cup of water
1 cup of prawn meat (optional)
Oil for frying
OPTIONAL TO SERVE
Put all your ingredients expect the oil and condiments for serving in a bowl and mix well to combine.
Heat a fry pan over a medium heat and add a splash of oil for frying.
Spoon the okonomiyaki mixture into the pan into a round pancake shape. When golden brown on the bottom, carefully flip and cook the other side until golden too. Make sure it is cooked through.
Remove from the pan and serve or keep warm in a low oven while you cook the rest of the mixture.
Top with your choice of condiments.
