Weeknight meals - quick tray bakes, special bolognese and vegetarian curry

Happy Monday friends.
I've been very quiet on here for the past few months. I've been busy with my other work, which also involves another love of mine, writing. I've also been looking after my three growing girls which takes a lot of my time. I've been missing sharing what I've been cooking in the kitchen and getting more stories and recipes from the book onto the blog too.
I thought I'd start with committing to a weekly post. Five weeknight meals that my family has been eating and the recipes to go alongside. Because I love cooking, I do tend to try and make different things most weeks (some with more success than others). Recipes from the cookbook are usually dotted throughout. Maybe you'll find some weeknight cooking inspiration too.

Turmeric and olive chicken tray bake
Approximately 45 minutes
I leave off the olives when I dish up my girls plates.
Balsamic and portobello mushroom Bolognese
Approximately 30 minutes, but you can make it ahead and reheat.
Approximately 1 hour, but you can make the chili ahead and reheat it. It tastes even better the next day. You can serve it over nachos or baked potatoes too.
Basil and prawn pasta (with dairy free pesto)
Approximately 20 minutes. If you're not a pesto fan, I fry off some prawns in garlic butter and stir it through the spaghetti. My girls love it.
Pumpkin and lentil curry
Approximately 50 minutes (faster if you use ready roasted leftover pumpkin) but you can make it ahead and reheat, it tastes even better the next day. This one can be a bit hit and miss with my girls. It's very mild and some nights they love it, other nights not so much. Kids can be fickle. I love this curry though.
