This has to be one of my girls favorite dinners. I always get a thumbs up for this one or a "you win at cooking tonight mum" when I make this.
PREP TIME: 50 MINUTES
COOK TIME: 30 MINUTES
Packet of lasagne sheets
500 grams of beef mince
2 tablespoons of olive oil
1 onion finely diced
A small handful (about 2 tablespoons) of fresh Oregano
A small handful (about 2 tablespoons) of fresh Thyme
2 cloves of garlic minced
2 carrots grated
1 bunch of spinach washed and sliced up
300 grams of mushrooms finely sliced
1 tin of tomatoes
1 tablespoon of tomato paste
2 cups of beef stock
2 tablespoons of butter
2 heaped tablespoons of flour
3 cups of milk
2 cups of grated cheese (1 for the sauce and 1 for sprinkling over the top at the end)
1/2 a cup of grated parmesan cheese (for sprinkling over the top)
Heat olive oil in a large fry pan. Add onion and fry until translucent. Add beef and brown. Add oregano, thyme and garlic and fry until fragrant. Add all other ingredients and continue cooking on a low heat until all the ingredients are well incorporated and you have a thickened meat sauce. You can shorten the cooking time but I find if you let it cook down the flavours intensify.
While the meat sauce is cooking. Add butter and flour to a medium saucepan and place on a medium heat. Stir until butter melts and combines with the flour.
Slowly add the milk, whisking as you go. Continue whisking until the cheese sauce thickens.
Pre-heat your over to 180 degrees celsius.
Oil a large rectangular baking dish, about 30cm x 25cm. Pour a little meat sauce into the bottom then place one layer of lasagne sheets. Add meat sauce on top of this and a small pour of the white sauce. Add another layer of lasagne sheets. Repeat this process until you have about three layers.
Place a final layer of lasagne sheets on top and pour over the remaining bechamel sauce.
Sprinkle generously with the remaining cheese.
Bake in the oven until the top is golden brown and bubbling, about 45 minutes. You can also insert a sharp knife to ensure your lasagne sheets are cooked through.
