A few of you said you were keen for this blueberry muffin recipe. I like it because you literally put everything in a bowl mix until combined and then pour into muffin tins. It makes about 12 medium size muffins. I use frozen blueberries but if you're lucky enough to have fresh ones, they work fine too.
2 cups of flour
3 teaspoons of baking powder
3/4 cup of castor sugar
1/4 cup of rice bran oil
1 1/2 cups of milk
1 cup of frozen blueberries
Preheat your oven to 180 degrees bake.
Put all ingredients into a mixing bowl and mix until combined. Pour into greased or lined muffin tins. Bake for 15 to 20 minutes.
